Our pasture-raised lamb shank comes from the bottom portion of the leg, making for a perfectly tender and flavorful roast. Sourced from lambs that roam freely on lush pastures, our lamb shank roast boasts an amazing natural flavor and a juicy texture. 

This cut is ideal for slow roasting. Season simply or not at all, or create a culinary masterpiece with a combination of your favorite herbs.

Ideas for roasting include slow roasting in the crockpot, in the Instant Pot, or covered in a Dutch oven or roasting pan.

In your crockpot, cook on low for 7-8 hours or on high for 4-5 hours. 

In a covered pot or Dutch oven, cook at 325°F for 2.5 to 3 hours. The meat is ready when it is meltingly tender and falls off the bone.

In an Instant Pot, cook on High Pressure for 45 to 50 minutes, followed by a 15-minute natural pressure release.

  • Pair it with seasonal sides like roasted vegetables and spring salads.
  • Offer a mint sauce or chimichurri for a fresh, zesty complement.

Helpful Tips
  • Sear first: Brown the shanks in a pan before slow cooking to lock in rich flavor.
  • Add liquid: Ensure the liquid (broth, wine, or tomato base) covers about halfway up the shanks. (Less for Instant Pot cooking.)
  • Test for doneness: Poke the meat with a fork; if it pulls apart with no resistance, it's done.
