Edgewood Family Farms in Dayton, VA, our pastured egg partner, provides their hens with plenty of green pastures, fresh country air, and sunshine (or rain!). The hens live in mobile or stationary shelters with frequently rotated pastures, and are fed a non-GMO grain mix that includes a special mineral pack and whole grains.
🥚 For perfect soft-boiled eggs, place eggs into a pot and fill with water until eggs are covered. Bring water to a boil and boil for 4-5 minutes. Rinse immediately in cold water and continue running under cold water until the eggs cool. Peel under running cold water.
For hard-boiled eggs, boil for 5 minutes, remove from heat, cover the pot with the lid, and let it sit for 2 minutes before rinsing/cooling the eggs.
🍳 For softer fried/sunny side up/over easy eggs, heat a cast iron skillet on medium-high heat with enough oil or lard to just cover the bottom. When the oil begins to sheen, add eggs, being careful not to break the yolks. When whites begin to firm, add 1/4 cup of warm water to the skillet and cover with a lid for 1-2 minutes to create steam. Remove lid and serve immediately for soft eggs! (This method works well to cook several eggs at a time.)
