Directions
Crockpot: Season your chicken as desired. Add about 1 cup of water and your whole chicken to your crockpot. Let it cook for 6-8 hours on high or 10-12 hours on low. Drain. Use the liquid for chicken broth and pull the meat off the bones for use as shredded chicken in your recipe of choice.
Oven: Pre-heat oven to 350. Place your defrosted chicken (breast side down) in a glass pan or Dutch oven, covered. Season if desired. Bake until a chicken leg can twist easily. ("Done" is 165 degrees, "fork tender" is 180-200 degrees.) This generally takes about 3 hours for a large bird. Use as a whole roasted broiler or pull the meat off the bones for shredded chicken.
Stovetop: Cover your chicken with water in a pan on the stovetop. Bring water to a boil, turn down to medium, and let it cook for 2-3 hours (a good way to tell when your chicken is fully cooked is that the meat starts falling apart when tested with a fork). Pull the cooked chicken off the bones.
After you are done cooking your chicken, you can make a delicious, healthy bone broth.
Making Broth From Whole Chicken (after it's baked):
Take the bones (and skin if desired) and put them in a crockpot on low for 6-12 hours, covered in water. Be sure to add any cooking juices from the bottom of the pan in which the chicken cooked! Vegetables and spices are optional but not necessary to make a nourishing and delicious broth.
